That smell of fresh peppermint when it has been cut for harvesting is hypnotic, there are so many uses for peppermint that I probably can’t list them all, peppermint tea is stimulating and can give you a burst of energy. It's great for breath refreshment, gum, toothpaste, mouthwash and also helps sore muscles. Tinctures and oil infusions can be made with peppermint and all sorts of DIY’s can be made from these mixtures. I do plan on posting on how to make different tinctures and how they can benefit you ay another time, but for now I am going to share a food recipe that my family enjoyed.
Fresh Peppermint Chocolate Chip Buttercream Frosting
1 cup fresh peppermint leaves pulled off of the stems
1 stick of butter
2 t vanilla extract
2 T cream
1 pinch of salt
3 1/2 cups powdered sugar
1/4 cup semi sweet mini chocolate chips
Instructions
- Put mint leaves in a blender/food chopper and pulse a few times.
- I used cold butter and cut it into tablespoon size pieces, add it to the mint a few at a time and cream together, use a spatula to scrap sides and make sure it is all mixed and creamy.
- Scoop out the mint butter mixture and put into a medium size bowl.
- Add in vanilla, cream, salt and mix.
- Add in powdered sugar 1 cup at a time and mix until it is a frosting consistency, if you want it thicker you can add more powdered sugar but keep in mind that it will make it more sweet.
- I chopped my chocolate chips into smaller bits. But they can be left whole , fold into frosting.
Use on any cake or brownie.
I didn’t use any food coloring or peppermint flavoring, you can add green food color if you want a brighter green color, I was going for a more natural outcome, fresh mint has more of a green flavor than peppermint extract, some people may prefer the extract flavor, I liked it but I like a lot of herbs and greens, I think its worth giving it a try.
